White teas are unfermented teas made from very young tea leaves or buds that are steamed immediately after harvest to inactivate polyphenol oxidase and then dried. Consequently, white teas usually contain higher concentrations of catechins than other teas.

Tea leaves that are destined to become green teas are withered by air drying prior to heat inactivation of polyphenol oxidase. Although still rich in catechins, green teas may have slightly lower catechin concentrations than white teas.

During the processing of black teas, tea leaves are rolled and allowed to oxidize or ferment fully, resulting in high concentrations of theaflavins and thearubigins and relatively low catechin concentrations.

Oolong teas are only partially fermented—they are allowed to oxidize for shorter periods than black teas. Consequently, oolong teas fall between green and black teas with respect to their catechin concentrations.

There are some wonderful teas available. This selection of UK tea merchants have quite a selection from many different countries. Although leaf tea may look more expensive than tea bags, remember that you can make multiple brews from most leaf teas and that's true if you're making brews for kombucha as well as for drinking for it's own sake.

They have green Darjeeling and green Assam, a special aged Pu-erh and one or two teas are also organic. Their white tea is much cheaper than other sites.

They have an amazing range of Rooibos teas. Like Camelia Sinensis tea, Rooibos (Aspalathus Linearis) can be manufactured in fermented (black) form and unfermented (green) form. You'll find both kinds here as well as Rooibos mixed with fruit and herbs too.

The sampler packs are a good way to try a range of new and interesting teas.

There's some interesting information on the site about tea production and you can buy online too. The site says of their white tea 'Silver Tips' "The buds were picked by 6 specially selected pluckers for this task". So rather like Cuban cigars rolled on the thighs of virgins then.
