Beef
Nothing
tastes like beef from the contented cattle that graze for the
majority of the year on naturally lush and mineral-rich grass.
In the depth of winter our cattle are housed in warm dry conditions
where they are fed a natural diet. But our skill doesn't stop
there. All our cattle are naturally reared on traditional farms.
We use superior animals, of just the right age, then mature the
beef for up to three weeks for maximum tenderness and taste.
Lamb
It takes years of skill and judgement
to produce great lamb. Naturally, our lamb is reared on farms
where
they
are free to graze, and their diet and welfare is of paramount
importance. We source from some of the best farms in the UK
depending on the time of year, as spring lambing starts later
in Scotland
than in the warmer southern counties.
Game
Free-range meat doesn't come much freer than wild game. Left
in peace to roam in the forests and forage for its own, entirely
natural diet, nothing else can beat it for taste. For centuries,
Scotland's vast heather-clad moors have been prized by royal
hunters and poachers alike. Donald Russell game is traditionally
hung to develop the flavour, then expertly prepared to a high
'kitchen-ready'
standard and
quick-frozen to lock in the freshness, taste and nutrients.
Pork
Our fresh pork is 'Carvery Standard' with a good, mellow taste,
smooth texture, and very crispy crackling on the roasts.
Fish
Scotland's clear waters, icy temperatures, and a natural diet
create some of the finest fish and seafood in the world. Donald
Russell has now extended it's range of top quality salmon and
seafood by introducing a range of Wild White Fish from the
North Sea. The white fish range is specially selected for us by
Robert Milne, a true Scottish man of the sea, whose family have
been
involved with the fishing at Peterhead for generations. Choose
